Day
1 (Wednesday): Individual & Group Tasting
Our
first day focuses on Blind Tasting in an individual & group
settings format. Individual tasting will begin with a 30 minute
(6) wine flight in which students work through the wines individually.
This is followed by small group settings, giving both the instructors
and students the opportunity to evaluate each others' tasting
skills. The students will then be called upon to comment upon
the wines and their conclusions. Secondly, students will participate
in at least 2 comparative wine flights, looking at similarities
and differences of a given group of wines. For the group exercises,
you will be put in the hot seat with an individual, instructor
supervised, videotaped blind tasting. Instructors will then speak
to each student’s strength and weaknesses, as well as evaluate
results and tasting method.
Day
2 (Thursday):
Continued Tasting, Service & Wine Program Management
Our
second day continues to focus on Blind Tastings similar to Day
1. In addition, we touch upon aspects such as the restaurant floor
and cellar, decanting, wine service, wine list development, wine
cost controls, etc. Training includes an application of food and
wine pairing exercises. Also, we will also focus on back of house
skills through real life case studies that includes topics such
as supplier negotiation, wine list development and wine cost controls
to help you understand what it takes to be successful today’s
wine industry environment.
